This will be the best Lemon Chicken that you ever had. It is light and delicious and easy to make. I usually make a large batch of it and keep it for lunch leftovers. It actually tastes better the next day. So it is even great to do for summer cookouts. My family can’t get enough of it.

For this recipe, as in any recipe that I show you quality ingredients are so important. I use my extra virgin olive oil made in Tuscany and Teresa’s Tuscan Spice. Both are available on here my website www.miciamammas.com
Grilled Lemon Chicken
(Serves 6)
Chicken
3 lbs Chicken, I used cutlets, but you use the cut of chicken of preference
⅓ Cup Extra Virgin Olive Oil
6 Garlic Cloves
6 tbsp. Fresh Lemon Juice
2 Tbsp. Fresh Parsley
1 tsp. Italian Spice, I use Teresa’s Tuscan Spice
1 tsp. Salt
½ tsp. Pepper
Method
In a small frying pan add the oil and garlic. Cook on a low flame until the garlic is cooked through. Mash the garlic up into the oil and cool.
In a bowl combine the garlic oil, lemon juice, parsley, Italian Spice, salt and pepper.
Pour over the chicken, reserving about 1/4 of it to pour over the chicken once it is cooked. Marinate for at least 30 minutes to an hour.
Heat the grill and cook on each side for about three minutes on each side or until the chicken is cooked through. Serve!
