Chicken Piccata

Chicken Piccata is a delicious chicken dinner that comes together in minutes. My family loves it. This dish looks and tastes so fancy but it is so simple. So, it’s great for a date night in or even a Sunday Dinner. Nothing says I love you more than a home cooked meal. As my grandpa always said, “Food is Love,” and I firmly believe this.
Ingredients
8 Chicken Cutlets (about 2lbs.), Pounded Thin
1 ½ tsp Salt
1 tsp Pepper
1 Cup Flour
12 tbsp. Butter
⅔ Cup Fresh Lemon Juice
1 Cup Chicken Broth
½ Cup Capers, Drained and Rinsed
2 tbsp. Fresh Parsley, chopped
Method
In a shallow bowl combine flour with 1 tsp of salt and 1 tsp of pepper. Dread each chicken cutlet in the flour on both sides and shake off any excess.
In a large skillet, heat 8 tbsp. of butter. Let it melt and add the chicken. Cook the chicken for about 4 minutes on each side. Remove the chicken from the pan.
To the pan add 4 tbsp of butter. Let it melt and add ½ cup of the broth, lemon juice and 1/2 tsp. of salt. Let that come to a simmer and reduce for about 5 minutes on low to medium heat. Then add in the capers.
Put the chicken back in the pan to finish cooking. Add ½ cup of broth, combining the sauce well. Cook for about 4 more minutes, spooning the sauce over each piece of chicken. Garnish with fresh parsley. Serve Immediately.
