This easy LAZY WEEKNIGHT DINNER is made in one pan and it is delicious. It is so easy to do because it comes together in minutes and it will wow your family any night of the week.
In this recipe, I use Teresa’s Tuscan Spice in the marinade. I sell this spice on my website and it is fabulous. It is a blend of amazing Mediterranean spices and you can use it on so many things from chicken, to veggies and fish…even salads
in addition, I also use my Italian style breadcrumbs in this. You could find that recipe on my website as well. I highly recommend you making these. If you do not want to do this, you can use store-bought one and just add grated pecorino to it
Ingredients
(Serves 4)
Marinade
8 Pieces Chicken Cutlets
3 tbsp. Olive Oil
1 Lemon, juiced
¾ tsp. Salt
¼ tsp Pepper
¼ tsp. Italian Spice, I use Teresa’s Tuscan Spice
Topping
¾ Cups Italian Style Breadcrumbs, see my recipe
¼ tsp.
5 tbsp Olive Oil
Sauce
¼ Cup Olive Oil
1 Lemon, juiced
¼ tsp. Salt
¼ tsp. Pepper
1 tbsp. Parsley, chopped
Plus extra olive oil to coat the pan
Method
In a bowl, combine 3 tbsp. olive oil, lemon juice, salt, pepper and Italian spice.
Add in chicken and marinate in the refrigerator for 30 minutes to an hour.
Preheat the oven to 375 degrees.
In a small bowl combine the bread crumbs with the 5 tbsp. olive oil.
In a separate bowl make the sauce, combine ¼ cup olive oil with lemon juice, salt, pepper and parsley.
In a pan drizzle in some olive oil to coat the pan (about 2 tbsp.). Place the chicken in the pan in a single layer.
Top each piece of chicken evenly with the breadcrumbs.
Pour the sauce around the perimeter of each piece of chicken. Cover with aluminum foil and bake for about 25 minutes.
Remove the foil and bake for another 15 minutes until the bread crumbs get crispy. Serve
NOTE: the baking time can change depending on the thickness of the cutlets the internal temperature of chicken should be 165 degrees.
