This delicious no fuss Chicken Bruschetta is a no excuse meal. It is so easy to do and is light and fresh for the summer.
Bruschetta Chicken
Ingredients
(Serves 4)
2.5 lbs of Chicken Cutlets
1 cup Olive Oil
4 tbsp. Balsamic Vinegar
1 ¼ tsp. Salt
2 tsp. Italian Spice, I use Teresa’s Tuscan Spice
Bruschetta Topping
2 Tomatoes
2 tbsp. Red Onions
3 tbsp. Chopped Fresh Basil
6 oz. Mozzarella, sliced
Method
Put the chicken cutlets in a large bowl.
In a measuring cup mix olive oil, balsamic, salt and Italian Spice. Add about ¾ of the mixture to the chicken and combine.
Let it marinate for about 20 minutes.
Heat your grill. Cook the chicken on both sides until cooked through, brushing the chicken with the remaining marinade in the bowl.
In a separate bowl combine the tomatoes, red onion, fresh basil and the rest of the marinade
Top the chicken with the mozzarella, let it melt. Remove from the heat and top with the tomato salad.
Serve.
