BBQ Chicken with Homemade Bourbon BBQ Sauce

(Serves 3)

For the Chicken

6 Chicken Breasts – Cleaned, boneless, skinless

¼ Cup Olive 

1 ½ tsp. Salt

1 ½ tsp. Pepper 

Bourbon BBQ Sauce

**you can use store bought but homemade so much better 

4 Cups Ketchup

2/3 Cup Apple Cider Vinegar

9 TBSP. Dark Brown Sugar

4 tsp. Honey

3 tsp. Worcestershire Sauce

1 tsp. Dry Mustard

1 tsp. Garlic Powder

1 tsp. Salt

½  tsp. Black Pepper

1 tsp. Chili Powder

1 Cup Molasses

2 tsp. Dijon Mustard

2 tsp. Paprika

1 tsp. Smoked Paprika you can add more if you like the smoked flavor

2 tsp. Bourbon

¼ tsp. Red Pepper Flakes

For the BBQ sauce…It can be made ahead of time.  In fact, it gets better when it sits a little. Put all the ingredients into a pot on medium heat and bring to a slow simmer.  Mix constantly with a whisk.  Lower the flame and cook for 10 more minutes.Be sure to continually stir. You do not want it to burn. Turn off the heat and set aside. Note..You can use this on any meat of your choice. It is great on pulled chicken as well!

Heat your BBQ or grill to high.  Brush olive oil on each piece of chicken and season with salt and pepper on both sides. Put on the grill and cook for 5 minutes on one side, leaving the BBQ uncovered.  Flip to the other side and cook for another 5 minutes. Now it is time to brush on (Heavily) the bbq sauce. Cook for another two minutes, they turn and repeat this step on the other side.  The chicken should be 165 degrees in the middle. 

Remove from the heat and serve.  The leftover bbq sauce can be stored in an airtight container for up to 2 weeks.
