Baked Oatmeal

 

Baked oatmeal is a quick and easy breakfast idea.  It is like a big oatmeal cookie, but I has healthy ingredients including almond milk, pecans, raisins and eggs. I also use coconut sugar. You can use brown but coconut sugar is healthier. Compared to regular sugar it has small amounts of iron, zinc, calcium, potassium. Plus, it has a lower glycemic index. 


In a house with five kids everyone gets up at different times. So this breakfast is super convenient. You can just grab a piece, heat it up and top with warm almond (or regular milk) and fresh berries whenever it is needed. I even do a drizzle of honey. 


It is also a great recipe for brunch



Baked Oatmeal 

(Serves 8)

Ingredients

4.5 cups Oats

1 1/4  cups Coconut Sugar (you can use brown sugar)

3 tsp. Cinnamon

3 tsp. Baking Powder

1 1/2 cups Almond Milk (you can use whole milk)

3 Eggs, beaten 

3 tbsp Vanilla

1 cup Golden Raisins

3/4 cups Chopped Pecans, you can also use walnuts

1 ½  Apples, diced into small cubes

Plus more Almond milk or regular milk to pour over each piece (about a half cup for each serving)

Fresh berries/coconut flakes for topping 


 

Method

Preheat your oven to 375°. In a large bowl combine all the ingredients well. Grease a 12 x 8 baking pan and add the oat mixture to it. Cook for about 35 minutes or until a knife inserted into the middle comes out clean. 

Cut a piece of the oatmeal and put in a bowl. Pour warm milk over it and garnish with fresh berries. Maybe even a drizzle of honey. 

The oatmeal will stay nicely in your refrigerator for up to 5 days. Make sure it is covered well.
