Savory Spinach and Feta Brownies…have you ever had a savory brownie? Well let me tell you if you haven't you need to try these. These are almost like a spanokppita (but so easy to make) but in brownie form. They are incredibly light and delicious. My family loved them.
I served them as a side dish to some grilled chicken and salad.
Savory Spinach and Feta Brownies
(8 Pieces)
¼ Cup Extra Virgin Olive OIl
½ Onion (about 3 oz)- Chopped
3 Scallions (about ¼ Cup) – Chopped
6 Cups Baby Spinach- Chopped
3 tbsp. Fresh Dill- Chopped
1 ½ Cup Flour
1 tsp. Baking Powder
1 ½ tsp. Salt
1 tsp. Pepper
1 cup Milk
2 Eggs – Beaten
4 oz. Crumbled Feta
4 oz. – Low Moisture Mozzarella- Shredded
6 tbsp. Grated Pecorino Romano
Preheat your oven to 375 degrees. In a frying pan, heat up olive oil and add in onions. Sauté for three minutes on low heat and add in the scallions. Cook for 5 minutes until the onions become translucent. Add in the spinach and cook until the spinach wilts and mix in the dill.
In a bowl combine the flour, baking powder, salt, pepper, milk and eggs. Once combined add in the spinach mixture, feta, mozzarella and 4 tbsp. of Pecorino. Spray a 10 x 7 brownie pan with non-stick spray. Pour in the batter. Brush the top with olive oil and sprinkle on the remainder of the Pecorino. Bake for a half hour or until a knife comes out of the brownies clean. Cool slightly, cut and serve.
