These roasted pepper rolls (Involtini di peperoni gratinati) are a delicious addition to your antipasto or even a great side dish.
Roasted Peppers Gratinati
Ingredients
(Serve 4 as a side dish or antipasto item)
4 Red Peppers
¼ Cup Olive Oil, plus extra to grease the pan
½ Cup, Plus 2 tbsp. Italian Style Bread Crumbs (See the recipe on my website or you can use store bought). If you use store bought please add some grated pecorino (¼ cup) to them to give it better flavor.
7 oz. Mozzarella, sliced into small logs
Method
Roast the peppers on high heat on your BBQ until they are charred on the outside.

Preheat the oven to 475℉ and roast.
Line a shallow baking pan with a parchment sheet. Place the peppers on the sheet and put them in the oven on the top rack. Cook for about 50 minutes, turning the peppers about halfway through cooking. You will notice the skins of the peppers will char.
Remove from the oven and put the peppers, including the drippings and pepper juices from the pan, in a glass bowl and cover with plastic wrap for 30 minutes until cooled.
Lower the oven temp to 375 degrees.
Use your hands to remove the stems, seeds and skin of all the peppers. Do not run them under water; this will take away from the flavor. Save 2 tbsp. of the pepper drippings and out to the side. Divide each pepper into 3 or 4 slices. About 2 ½ inches wide.
Coat a small baking dish with olive oil.
Put the olive oil in a small bowl. Put the bread crumbs in another.
Dip the pepper in the olive oil and coat on both sides with the oil.
Next dip the pepper in the bread crumbs and coat on both sides like you would a chicken cutlet.
Place the coated pepper slices on a flat surface.
Place mozzarella in the middle of each pepper slice. Starting from the bottom of each piece, roll in up. Place each roll open side down in the baking dish. Repeat this princess for all the peppers.
Lightly drizzle with olive oil, pour the dripping into the pan around each piece, but not over the top of the peppers. Bake for 15 to 20 minutes until golden brown and the cheese is melted.
Serve.
