Burrata toast with roasted Delicata squash is so easy to make. It’s a favorite of mine this time of year.I love to toast it in a frying pan with olive oil. This technique makes the bread so crusty and full of flavor.
Roasted Delicata Squash and Burrata Toast
(Makes 3 toasts)
½ Delicata Squash cut in ½ (slice in ¼ inch pieces)
4 tbsp. Olive Oil
½ tsp. Salt
¼ tsp. Pepper
3 Slices of Round Italian Bread Sliced
4 Small Burrata Balls- Drained
3 tbsp. Pomegranate Seeds
Balsamic Reduction for drizzling
Preheat your oven to 400°. Line a baking sheet with parchment paper. Lay your sways on the pan and drizzle it with 1 tbsp. olive oil and season with salt and pepper. Put it in the oven for about 10 minutes until it’s nicely browned and cooked through.
In a frying pan, heat up 3 tbsp of olive oil. Toast each side of your bread for about two minutes on each side until golden brown. For plating, take one Burrata ball and pull it apart. Spread it over the piece of toast. Repeat the same process for the other two toasts. Take your squash and place them evenly over each piece of toast. Sprinkle on the pomegranate seeds and drizzle with balsamic reduction. Serve
