Italian Style Pigs in a Blanket

1 lb- Thin Ring Sausage – Cheese and Parsley

1 (8oz) Package of Crescent Rolls (I used Pillsbury)

1 Egg – Beaten

1 tbsp. Grated Pecorino Romano 

Preheat your oven to 375 degrees.  Line a baking pan with parchment and place the sausage on it.  I like to use the cheese and parsley pork sausage but the spicy one or the chicken versions will work well too. Place the sausage in the oven and brown on both sides.  Basically you are cooking it through as well. 

Roll out your crescent rolls in the meantime.  You are going to cut each roll into three individual triangles.  Line a baking sheet with parchment.

When the sausage is cooked, cool and cut into 1½ inch pieces. Lay out your cut crescent rolls, tip of the triangles (the short side) facing you.  Place the sausage on the tip of the triangle and roll upwards. Place the rolled sausage on the parchment lined baking sheet open side face down.  Continue this process for each roll.  Then brush each roll with egg wash and sprinkle with grated cheese.  Put in the oven and cook for 12 to 15 minutes, until the rolls are golden brown.  Serve with some mustard or tomato sauce for dipping.  This is optional.  These can be made a few hours in advance and cooked when needed.
