Italian Sausage and Pepper Nachos
(Serves 4)
1 tbsp. Plus ¼ Cup Olive Oil
¾ of Italian Cheese and Parsley Sausage – out of the casing
1 Large Onion- Sliced Thinly
2 Red Peppers- Seeded and Julienned
1 Green Pepper – Seeded and Julienned
¾ tsp. Salt
½ tsp. Pepper
3 10- Inch Flour Tortillas
Vegetable Oil for Frying
1 ½ Cups of Grated Mozzarella
Pepper Rings in Vinegar for Garnish
Heat up your frying oil in a deep pot. You can also use a fryer. This will be used to fry the tortillas.
In a large fry pan heat up 1 tbsp. of olive oil. Add the sausage and cook. Break it up as it cooks almost like you would do to taco meat. Cook until it is cooked through and browned and remove from the pan. Put ¼ cup of olive oil in the pan and add the onions. Cook for about 10 minutes until they become translucent and add the green and red peppers. Season with salt and pepper and cook for about another 10 minutes or until the vegetables are soft. Add the sausage back and cook for another few minutes.
Preheat your oven to 400 degrees.
Next, cut one tortilla in half and then cut into triangles. You want the triangles to look like the shape of a nacho chip.
Fry the triangles. They will puff up a little. Be sure to turn them so they get golden brown on each side. Remove from the oil and place on a paper towel to drain any excess oil. Repeat this process for all three tortillas.
In an oven safe shallow baking pan (I used a 13 x 9 pan), put one layer of the fried tortilla chips. Top with some of the sausage and peppers mixture and sprinkle with the grated mozzarella. And bake until the cheese is melted.
