This may look like a dried up bagel but it isn’t. It is called a friselle and it is a traditional Italian bread that is double baked. So, you find that they come out of the package quite hard. What we always did, was soften them by running them under water. Then you can use your imagination for toppings, just like you would a bruschetta.
In this recipe, I did use a cheese that I love getting here in Italy 🇮🇹 called stracciatella. It is the inside of the burrata. When I am here, it’s the first thing that I grab at the supermarket. I cannot eat this at home because it bothers my stomach, but I can eat it here. So I tend to eat it a lot 😂
You can find this cheese along with friselle in an Italian specialty store. If you can’t find the stracciatella just use burrata.
Ingredients
2 Friselle, softened under water
2 Small Tomatoes, chopped
½ cup Extra Virgin Olive Oil
½ tsp Salt
⅛ tsp. Pepper
5 Basil Leaves, chopped
1 Burrata Ball or if you can find it stracciatella cheese
Method
Run the friselle under cold water until they begin to soften. Sprinkle on a pinch of salt, pepper, and about 2 tbsp. olive oil.
In a small bowl, add the tomatoes, basil and the remaining olive oil, salt, and pepper. Combine
Top each friselle with the tomatoes. Top with the stracciatella. Serve.
