Ceci (chick peas) Salad (Serves 8)

Ceci (Chickpea) Salad is a great meal prep recipe. It is not only healthy and delicious but it also can be made in advance and kept in the refrigerator for up to a week.

ChickPea Salad


Ingredients

(Serves 8)

3 (19 Ounce) Cans Chickpeas, Drained Well

4 Celery Stalks (about 4 Ounces), Diced 

½ Pound Imported Sharp Provolone, Cut into Small Cubes 

⅓ Cup of Fresh Parsley, Chopped

½ Red Onion (about 3 Ounces), Sliced Thinly

½ cup, Roasted Peppers, chopped

1 Teaspoon Salt

½ Teaspoon Pepper

1 Cup Fresh Lemon Juice (about 5 Lemons)

¾ Cup Olive Oil 


Method


Combine all ingredients in a bowl and chill. 

Serve.
