Carmelized Onion, Fontina and Pecorino Drop Biscuits

Caramelized Onion, Fontina and Pecorino Drop Biscuits are a perfect addition to your holiday table.  Trust me when I say that they are so easy and they are so incredibly delicious.  Your family will thank you for this one! Oh and for those that don’t know what drop biscuits are…. they are basically classic biscuits, except there is no rolling required. Mess free and no fuss but so gooood!!!!!! 

Recipe – Makes about 18

1 Large Onion Cut  in Half then Thinly Sliced

¾ Tsp. Fresh Thyme

2 Cups Flour

1 TBSP. Granulated Sugar

1 TBSP. Baking Powder

10 TBSP. Salted Butter- Cut into Very Small Pieces, Plus 2 TBSP fo the Onions

¾ Cup Whole Milk

1 Cup Shredded Fontina

½ Cup Grated Pecorino Romano

In a frying pan heat the 2 tbsp. of butter and add the onions.  Cook on a low flame.  The onions will begin to caramelize after about 10 minutes.  They will have a golden brown color.  Add the fresh thyme. Set aside and cool.

Preheat the oven to 450 degrees.  Line a baking pan with parchment. 

For the biscuits, add the flour, sugar and baking powder to a bowl and combine. Add in the butter.  Using your hands, crumble the butter into the flour mixture. You are going to basically rub the flour mix in between your fingers to make the mix fine. Add the onions, the Fontina and the Pecorino.  Work this into the mix and then slowly add the milk.  Mix until the dough comes together.  Using an ice cream scoop (about 2 tbsp.), scoop the batter onto the parchment.  Bake for 15 minutes until golden brown.
