Potato Salad

(Serves 12)

5 lbs of small red potatoes 

1 bag of string beans about 12 oz -cooked

4 hard boiled eggs -quartered

½ cup sliced red onions

15 basil leaves chopped

¾ cups Extra Virgin Olive oil 

¼ cup red wine vinegar 

1 tsp salt. 

½ tsp freshly grated black pepper 

In a pot boil the potatoes with the skin on. Once they are cooked drain and allow to cool. Depending on the size of the potato either cut it in half or in quarters. Add the potatoes to a bowl. Then add the cooked string beans, the hard boiled eggs, onions and basil. In a small mixing bowl combine the olive oil vinegar and salt to make the dressing. Pour the dressing over the potato salad and mix gently. Add some freshly grated black pepper and serve.
