Spaghetti with Pesto
Ingredients:
1 pound of spaghetti- I used Dececco pasta
1 large bunch of fresh basil-make sure you wash the basil really well as it gets very dirty.
½ cup of grated Pecorino
⅓ cup of toasted pignoli nuts
5 garlic cloves
Juice of 1/2 lemon
Olive oil for drizzling
Salt & Pepper to taste
Directions:
Cook the pasta according to directions. Saute garlic in olive oil on low heat until it becomes soft for about 5 minutes. Add all of the ingredients in a food processor adding olive oil until the mixture comes together and is a little loose. Add the sauce to the cooked pasta and stir well. Add extra grated cheese for garnish.
