Roasted Whole Cauliflower
1 Cauliflower Head- Whole – Cleaned, Outer Leaves Removed, Carefully Cut the Bottom of The Stem Off- Keeping the Whole Cauliflower intact
¾ Cup Extra Virgin Olive Oil
½ Cup Grated Pecorino Romano
1 Tsp. Salt
1 Tsp. Pepper
2 Tbsp. Chopped Fresh Parsley
Preheat the oven to 425 degrees. Line a baking sheet with parchment. Place the cauliflower on the parchment upside down. In a bowl, mix all the remaining ingredients. Pour ½ of the mixture over the cauliflower. Using your hands or a pastry brush work the mix in between the core and all around. Flip the cauliflower over and pour the remaining oil mixture over the top of the cauliflower. Use your hands or a pastry brush to spread it around evenly.
Put in the oven and roast for about 35 to 40 minutes and serve.
