Roasted Beets with Mint, Tangerines and Crumbled Feta



4 beets

1 cup of crumbled feta cheese

2 tangerines-cut into small chunks

Hand full of mint

Salt & pepper to taste

Olive oil for drizzling

Balsamic vinegar for drizzling



Drizzle beets with EVOO and roast for 60 minutes at 350 degrees.  Once beets are cooked slice thin.  Put on a plate and add feta, mint, tangerine, EVOO, balsamic vinegar, salt and pepper.
