Mini Red Velvet Bundt Cake

 

Ingredients:

Cake

1 ¼ cups flour 

½ tsp salt

1 cup granulated sugar

½ cup unsalted butter softened

1 large egg

2 tsp cocoa powder 

1 ½ tsp red food coloring 

½ cup buttermilk 

1 tsp vanilla 

¼ tsp baking soda

2 tsp cider vinegar 

 

Cream Cheese Frosting

4 ounces cream cheese 

1 tsp vanilla 

1 cup confectioners sugar sifted 

3-4 tbsp milk

Directions 

Preheat oven to 350.  Grease and lightly flour 6 mini Bundt pans ( we use Dash brand).  In a medium bowl sift flour and salt together.  Set aside.  In a mixer with paddle attachment cream butter and sugar. Add egg.  Alternate the flour mixture with the buttermilk. Mix in vanilla.  In a small bowl, mix red food coloring and cocoa powder until paste forms.  Add to batter and mix well. In another small bowl mix together cider vinegar and baking soda. It will foam!  Add to batter immediately and mix until well  combined. Put in pan and make 15-20 minutes.  For the icing mix cream cheese and vanilla. Add sugar and milk. Drizzle over the cakes.
