Quick Kitchen Sink Sausage & Peppers                    



1 ring of chicken sausage

1 ring of cheese and parsley pork sausage

1 cup of sweet jarred peppers sliced thin

1 cup of regular roasted peppers sliced thin( I used my homemade red and green ones)

8 whole garlic cloves

1 fennel bulb cut up into chunks

1 head of bok choy cut into thick slices-use the whole bok choy

Olive oil for drizzle

2 cups of small red potatoes-cut in half

4 Bay leaves

Salt and pepper to taste

1 TBSP garlic pepper

Juice from the sweet peppers-a healthy drizzle 

Juice from the roasted peppers-a healthy drizzle

1 hot cherry pepper



Put bok choy, roasted peppers, garlic, fennel, bay leaf, garlic pepper, salt and olive oil on a sheet pan and roast in the oven at 425 for 20 minutes. Meanwhile, cook the sausage and  potatoes in a pan on the stove with olive oil and the juice from the roasted peppers and sweet peppers and the hot cherry pepper for about 25 min on medium high heat.  Assemble all of the ingredients.
