Peach Melba                                                  



8 peaches

1 cup of sugar

2 TBSPs vanilla

2 cups water

Whipped cream

Jarred wild cherries-I used Amarena Fabbri

Amaretti cookies-crush into small pieces

1 lemon-juiced



Cut the peaches in half.  Over medium low heat add water, sugar, lemon juice and vanilla. Stir until all the sugar is dissolved.  Turn the heat up to medium high until it turns into a syrup.  Bring back to a simmer and add the peaches in.  Turn the peaches after 2 to 3 minutes.  Remove from heat and let cool, peel off the skins, and remove the pits. Place the peaches on a platter and garnish with vanilla ice cream, cherries, whipped cream and top with the amaretti cookies.
