Oatmeal Chocolate Chips Cookies

 

1 and ½ cups flour 

1 tsp. Cinnamon 

1 tsp.  Baking Powder

¾  tsp. Salt

1 cup Butter (soft)

1 cup Brown Sugar 

½ cup Sugar

2 eggs (room temperature)

1 Tbsp. Molasses 

1 ½ tsp. Vanilla Extract

3 Cups of Oats 

1 ½ cups Mini Chocolate Chips

 

Preheat the oven to 350°. In a bowl whisk the first four ingredients. 

Using a mixer fitted with a paddle attachment, beat the butter until smooth (about 1 minute). Add the sugar and brown sugar and beat until creamed. About 2 minutes. Add the eggs, molasses and vanilla. Beat on high for one minute. Scrape the bowl if necessary. Slowly add the dry ingredients. Mix until well combined but don’t over beat. On a low speed add the oats. Then add the mini chocolate chips. Chill for 45 minutes. Take 1 tablespoon of dough and roll into a ball. Place in a baking sheet lined with parchment and gently flatten the ball a little. Bake for 12 minutes.
