Nutella Stuffed Zeppoles



2 eggs

3 Tbsp’s sugar

1 ½ tsp’s vanilla extract

1 cup of Ricotta cheese

1 cup of all purpose flour

2 tsp’s baking powder

¼ tsp salt

Vegetable oil for frying

Confectioners sugar




Combine eggs, sugar and vanilla in a bowl and whisk.  Add the ricotta and stir.  In a separate bowl stir together the flour, baking powder and salt.  Add to the ricotta mixture and stir.  In a deep saucepan, pour in the vegetable oil about 3 inches.  Work in batches of 6 using two tablespoons to add the dough to the saucepan.  Cook until golden and then flip over until golden on the other side.  Using a piping bag with a metal tip, pipe a generous serving of Nutella inside. Sprinkle with the confectioners sugar.
