No Bake Valentine Cheesecake cups with Amarena   

Fabbri Wild Cherries and Graham Cracker Crust

 

Ingredients:

 

Cherry Sauce-1 8.1 ounce jar of Amarena Fabbri wild cherries (room temp)

 

Graham Cracker Crust- 24 Biscoff crackers or approx 12 regular graham crackers

½ cup of melted butter 

 

Cheesecake Mousse

½ cups of cold heavy cream

1 ⅓ cups of confectioners sugar

12 ounces of cream cheese

1 tsp of lemon zest

½ tsp of vanilla extract

 

Directions;

Combine crackers with melted butter in a food processor until well combined. 

Whip heavy cream with whisk attachment.  Add ⅓ cup of powdered sugar. Remove ½ cup of the whipped cream to a piping bag.  In a bowl of an electric mixer whip the cream cheese until smooth.  Add the remaining powdered sugar, lemon zest and vanilla and beat well. Fold in the remaining whipped cream that was reserved earlier.  

 

To Assemble:

Place 2 to 3 TBSP of graham cracker crumbs at the bottom of 4 serving cups.  Add 2 TBSPs of cherries followed by a dollop of cheesecake mousse.  Top with a piping of whipped cream.  Garnish with a fresh cherry and a piece of mint.
