Marinated Feta with Sun dried Tomatoes


6 sprigs of fresh Thyme

8 oz feta

2 garlic cloves 

4 Sun dried  tomatoes

10 peppercorns 

1 ¼ cups of olive oil-enough to cover ingredients 




Layer the Thyme, feta, garlic, Sun dried tomatoes and peppercorns into a sterile 16 oz jar. Top with olive oil. Seal and place in the refrigerator for at least 2 hours. Remove from the refrigerator at least 20 min before serving as the olive oil thickens up when chilled. This will last up to 2 weeks in the refrigerator.
