Macerated Strawberries with Mascarpone Cream and Amaretti Cookie Parfaits
(Makes 4 Parfaits)
For the 🍓 Strawberries 🍓
2 Cups Fresh Strawberries. – Sliced
1 tsp. Chocolate Balsamic Vinegar (I use Nuvo Brand)
1 tbsp. Honey
¼ tsp. Black Pepper
⅛ tsp. Salt
For the Cream
½ Cup Heavy Cream. – very cold
⅓ Cup Confectioners Sugar
½ cup Mascarpone
½ tsp Vanilla Extract
To Assemble Parfaits
8 Amaretti Cookies – put on a ziplock and smash to makes crumbs
Blueberries for garnish
In a bowl put the balsamic vinegar, the honey, the black pepper, and the salt. Mix well. Add the strawberries. Set aside for at least 20 minutes. And then refrigerate until ready to use.
Meanwhile using a mixer beat the heavy cream and confectioners sugar until thick. Make sure the cream is cold.
In a separate bowl whip the mascarpone with the vanilla. Gradually add the whipped cream to the mascarpone. Incorporate well but do not over beat. Refrigerate until ready to assemble the parfaits.
To assemble. First in a small cup put the cookie crumbs. Then add some of the strawberries and then the cream and more crumbs. Repeat this process until you get to the top of the parfait glass. Top with blueberries and more cookie crumbs.
Note. You can make these a few hours ahead of serving.
