Chocolate Chip Butterscotch Cookies

(Makes 30 Cookies)

4 Cups Flour 

1 tsp. Salt

1 tsp. Baking Soda

3 Sticks of Unsalted Butter – Very Soft

1 ½ Cups Light Brown Sugar

1 Cup Sugar

2 Eggs

3 Tbsp. Vanilla Extract

2 Cups Semi-Sweet Chocolate Chips

1 ½ Cups Butterscotch Chips

 

Preheat your oven 350 Degrees. In a bowl, sift together the flour, salt and baking soda.  In a mixer fitted with a paddle attachment cream the butter with the brown sugar and granulated sugar. Add the eggs and the vanilla. Then slowly add in the dry ingredients. Stir in both the chocolate and butterscotch chips. Chill your dough anywhere from 30 minutes to 48 hours.  

Line your baking sheets with parchment.  Take 2 tablespoons of dough and roll it into a ball.  Put it on the baking sheet and slightly press down on it.  So not flatten.  Repeat this process spacing the cookies at least an inch apart.  Put in the oven and bake for around 19 minutes, until the edges are golden and the middle is soft to touch. Remove from the oven and cool!
