Ceci (chickpeas) Salad

3 -19 oz cans of chickpeas drain well

½ lb Imported Provolone cut into small cubes 

⅓ cup of fresh parsley – chopped 

4 lemons juiced

¾ cups extra virgin olive oil 

Salt and pepper to taste 

 

Combine all ingredients in a bowl and chill. This recipe can be made in advance and will keep in the refrigerator for up to a week. Buon appetito!!!
