Pasta Salad in a Jar
Dressing
4 quart size mason jars
Ingredients:
1 cup of olive oil
6 minced garlic cloves
½ tsp salt
½ tsp pepper
½ cup balsamic vinegar
1 TBSP lemon zest
1 TBSP chopped basil
¼ cup pine nuts
Directions:
Heat olive oil in a skillet with garlic and cook 1-2 minutes. Add a little salt and pepper. Set aside 5 min and then add to the mason jar. Add balsamic, lemon zest and basil to the jar. Shake well.
Salad:
Ingredients:
1 bunch of kale thinly sliced
4 oz shaved parm cheese
3 cups of cherry tomatoes-halved
8 ounces of bowtie pasta
8 ounces of mozzarella balls
Directions:
Add kale to the same skillet you cooked the garlic in on medium heat for 2 min. Turn off the heat and let cool for 5 min and then add the parm cheese. Season with salt and pepper. Brown pine nuts for 4 minutes on medium low heat.
Assemble dressing, tomatoes, handful of pasta, pine nuts, kale, mozzarella, and more kale in a jar. Shake the jar before eating.
