2 pieces of salmon

2 lemons-one for garnish and one for zest

4 garlic cloves

Handful of parsley

½ cup of pistachios-shelled

8 dried apricots-cut into bite sized pieces


I package of fresh spinach

Salt and Pepper to taste



Add 2 tablespoons to a frying pan and heat on high heat.  Salt and pepper the salmon on both sides and add to the pan.  Sear for a minute or 2 on both sides.  In a food processor, combine the zest of one lemon, 4 cloves of garlic, chopped parsley, pistachios, apricots, a fair amount of olive oil (enough to bind the mixture into a paste), salt and pepper.  Pulse until the mixture becomes similar to a pesto sauce but a little more coarse in texture.  Add the seared salmon to a baking sheet and then add this mixture on top of the salmon.  If you have large pieces of salmon you may need to double this recipe to have enough.  Bake 350 for 15 minutes.  In the meantime, saute spinach in a little olive oil in a frying pan adding a little salt and pepper. Once the salmon is cooked plate the spinach and then the salmon on top. Garnish with fresh lemon slices.
