Baked Oatmeal 

9 cups of oats

3 cups coconut sugar (you can use brown sugar)

6 tsp. cinnamon

6 tsp. baking powder

3 cups of almond milk (you can use whole milk)

6 eggs

1 ½ cups of melted butter

9 tbsp of vanilla

2 cups golden raisins

1 ½ cups walnuts

3 apples diced into small cubes

Plus more Almond milk or regular milk to pour over each piece (about a half cup for each serving)

Fresh berries for topping 

 

Preheat your oven to 375°. In a large bowl combine all the ingredients well. Grease a 13 x 9 baking pan and add the oat mixture to it. Cook for about 40 minutes or until a knife inserted into the middle comes out clean. 

Cut a piece of the oatmeal and put in a bowl. Pour warm milk over it and garnish with fresh berries. Maybe even a drizzle of honey. 

The oatmeal will stay nicely in you refrigerator for up to 5 days. Make sure it is covered well.
