Baked Clams Oreganata

 

Ingredients:

1 ½ dozen clams

2 cups of Panko breadcrumbs

4 crushed garlic cloves

3 tbsp of fresh oregano

3 tbsp finely chopped Italian parsley

Red pepper flakes

Salt

3 tbsp olive oil

¾ cup chicken stock

Parmesan cheese

 

Directions:

Preheat the oven to 450 degrees.  Wash the clams.  Place the clams in the oven for 2 to 3 minutes to open.  Pry clams open, take out the clam and wash the clam off and the shell.  Place the clam back in the shell. Combine the bread crumbs, garlic, oregano, parsley, hot pepper and salt.  Add olive oil and the chicken stock until moist.  Pack each clam with the bread crumb mixture. Top with a little grated parmesan cheese.  Place on a sheet pan and broil for 5 to 6 minutes.  Serve with lemon wedges on the side.
